Maesawa Gyū (Iwate)

Opened with a mild, savoury beef note. The mid-palate developed a balanced umami profile, combining a gentle sweetness from the beef with a soft dashi-like base. The finish was clean and relatively short. Texture was even and light, with fine granules providing a subtle crunch without distinct focal points.

Zunda (Miyagi)

Opened with a restrained vegetal note from edamame. The mid-palate introduced a mild sweetness, balanced by light savouriness. Sesame contributed a soft nuttiness that became more apparent towards the finish. Texture was gently granular, with sesame seeds providing intermittent crunch against the softer base.

The set followed a clear progression from more defined savoury profiles (hotate, gyūtan) to softer, more subdued expressions (Maesawa gyū, zunda). Flavour clarity was highest in the gyūtan, where distinct components remained identifiable through the palate. Sweetness remained controlled across all variants, with no single profile becoming excessive. Texture was consistent in format, with minor variation from inclusions, though the rehydrated meat in the gyūtan sat slightly outside the otherwise cohesive textural range.

Overall, a structured regional set with clear savoury definition in stronger variants and controlled, softer profiles elsewhere, supported by consistent light texture.
