We picked up this Mama Shrimp (Tom Yum) Flavour after learning from Instant Noodle Diary that this hot and sour Thai soup is the most popular instant noodles in Thailand, both in terms of brand and flavour.

Each pack contained a fried noodle cake as well as powder soup and chilli powder in the dark brown sachet and chilli paste in the pink sachet. The soup contained chilli powder, dried leek and artificial lemon flavour, while the chilli paste contained spices, chilli, fish sauce and shrimp powder (0.12%).

As the noodles are already fried (much like the Nissin Chikin Ramen but unlike most Korean and Japanese instant noodles), these Mama noodles are prepared by covering the noodles and condiments in a bowl with 400 mL of boiling water for 3 minutes.

Stirring after 3 minutes, the noodles have a fragrant aroma of kaffir lime and lemongrass. Upon tasting, the noodles have an enjoyable bite but do not soak up much flavour from the soup, which itself has an enjoyable, though prominent, acidity from the lime juice that is balanced well with the savoury notes of the fish sauce and the sharpness from the lemongrass, kaffir lime leaves and galangal. Surprisingly, for a Thai brand, the soup has only a very mild spiciness from the chilli. Overall, the instant noodles are a tasty snack.
