Phở Pasteur, Parramatta

Phở Pasteur in Haymarket was among my initial introductions to Vietnamese cuisine nearly 15 years ago, and to this day, it continues to be one of our preferred destinations for enjoying a bowl of phở.

Phở Bò Tái ($16.00, +$2.00 for large). One of my ongoing frustrations with phở served at restaurants is the tendency for the beef placed on top of the noodles to become overcooked once the hot soup is poured over it. Interestingly, this is also the reason why I haven’t previously featured a post about this particular restaurant. I’ve often been so preoccupied with swiftly scooping out all the beef to prevent overcooking that I forget to document the experience. However, on more recent visits, we’ve managed to request the beef to be served on the side (with no additional charge), and this adjustment has truly made a significant difference.

The phở soup at Phở Pasteur has consistently carried a subtle sweetness and, admittedly, a noticeable dose of MSG, yet its overall beefy flavour has always been a pleasure. Alongside the customary accompaniments of bean sprouts and Vietnamese mint, the portion of flat rice noodles has been generously ample, and the beef portion equally generous. With plenty of complimentary tea offered to counteract the impending thirst caused by the MSG, Phở Pasteur has firmly established itself as a regular spot for us.
