
This is the Mikasa Bontenmaru from Miyagi Prefecture, a fusion of Japanese yubeshi and French sablé.

Each piece measured approximately 7 cm in diameter and 0.4 cm in thickness, featuring a yubeshi centre encased in a sablé and topped with walnuts.

The sablé had a moist, soft texture, resembling a delicate cookie, while the yubeshi provided a chewy centre similar to mochi. The crushed walnuts added a pleasant crunch. The cookie delivered a buttery richness that paired harmoniously with the sweet and savoury yubeshi, flavoured with soy sauce and sugar. The walnuts, a traditional ingredient in Tōhoku-style yubeshi, introduced a warm nuttiness without bitterness, even with visible husks. The combination of textures and comforting flavours was satisfying overall, though a preference for a crunchier cookie might elevate the appeal for repurchasing.
