Halo Halo Cafe is a highly regarded Filipino-Vietnamese fusion café which relocated from Willoughby to Parramatta in the first half of 2026. Their signature menu item is the halo-halo, alongside well-regarded coffee, savoury café dishes, and cheesecake offerings.
Pandan Basque Cheesecake ($10.00)
The cheesecake presented in a fluorescent green hue. While the intensity initially suggested colouring, the pandan flavour proved sufficiently assertive to support the appearance naturally, overtaking the cream cheese as the dominant aromatic and flavour element. The structure was rich, thick, and dense, yet remained tender enough for a fork to pass through cleanly. Edges developed a darker Maillard-driven crust characteristic of basque cheesecake, though without dryness. Through the mid-palate, the cheesecake softened and melted readily, spreading a fragrant pandan profile that remained persistent between bites without decline in intensity. The cream cheese funk stayed restrained and integrated.
Compared with 15cenchi, the cheesecake was cooked slightly further through the centre, resulting in less of the molten interior associated with the latter. Overall, a pandan-forward basque cheesecake with sustained aromatic intensity and a dense yet melting structural profile, resulting in a highly cohesive interpretation that balances richness with controlled cream cheese funk.
