The Blue Mountains occupy a soft spot in our hearts after D spent a year working in the area. And after enjoying their refreshing Blue Mountains Apple Juice at the Fairmont Resort, we try this Bilpin Blush Pink Lady Cider, which is made with only Pink Lady apples local to the Blue Mountains.
The cider has a pale straw colour, a very bubbly carbonation and a sweet apple nose with mild bitter alcoholic notes in the background. Served chilled, the flavour of the Pink Lady apple is sustained throughout each sip, with the sweetness of fresh Pink Lady apples coming through in the head, masking the bitter alcoholic undertones in the background, before a crisp apple acidity developed to create a more pronounced and tart apple flavour towards the end of the body, leaving a refreshingly crisp apple flavour lingering briefly in the aftertaste. The apple flavour was less crisp but more round and sweet (with more pronounced bitter alcoholic notes) than the Orchard Thieves Apple Cider.
