Souffle pancakes have been on my ‘hit-list’ since they first made a mark in Sydney mid-2018, and by mid-2019 it’d gained enough ground to be spoilt for choice. N and I dip our toes with the souffle pancakes at The Brothers Cafe in Haymarket.
This is the Thai Tea Pancake ($19.90, +$2.00 for pearls), with three souffle pancakes, a Thai tea cream sauce, white chocolate crumble, seasonal fruit and vanilla ice cream.
The pancakes are pillowy soft and light as expected, tasting more like airy and moist chiffon cake rather than the drier and denser pancakes we’re used to. The Thai tea sauce adds just enough additional moisture, sweetness and sharpness of spice to the pancakes. The fresh fruit cut through the richness, but I’d have been happy without the other toppings.
This is the Matcha Tea Pancake ($19.90, +$2.00 for ice cream), with three souffle pancakes, a matcha milk tea cream sauce, seasonal fruit, whipped cream and pearls.
The pancakes are identical in texture and flavour, but we’re not impressed by the slathering of whipped cream. Yet, discarding the whipped cream would’ve taken the matcha powder with it. We would’ve preferred a dusting of matcha sugar instead as well as a stronger matcha flavour in the sauce to distinguish it from the condensed milk base. Again, the fresh fruit cut through the richness, but we’d have been happy without the other toppings.
The souffle pancakes are everything we’d been promised — soft and high as a pillow and picture perfect — but too much for one sitting. Two pancakes or three pancakes without the excess toppings at a lower price would’ve been more suitable. The cafe also serves the usual modern cafe fare of burgers, sandwiches and pasta, but we’re not sufficiently inspired to return.
