Kōchi Ice Pomelo Sorbet

This is the Kōchi Ice Pomelo Sorbet, made from pomelo grown in Tosa, Kōchi Prefecture in Japan.

The pomelo came through as an initial sweetness that developed swiftly with a gentle bitterness from the pomelo rind that developed to an enjoyable and refreshing intensity in the finish. To complement the bitterness of the rind, tiny bits of pomelo flesh are distributed throughout the sorbet to leave behind bits of bright pomelo flavour and texture in the aftertaste. As with all citrus fruits, the oils in the rind leave a numbing effect on the tongue as we eat — and for a period after eating  — but it does not detract from the flavour.

This Kōchi Ice Pomelo Sorbet contained 115 ml. It was produced in Japan and purchased in Sydney, Australia in 2021.
