This is the Early Spring Supreme Longjing with White Pomelo and Lemon ($9.20, cold, half sugar, less ice, +$1.00 for agar pearls) from Tea & Co. It was a seasonal limited beverage featuring a longjing, or dragon well, green tea base flavoured with white pomelo and lemon.

The beverage had a translucent yellow hue with white pomelo juice vesicles at the base and three slices of lemon. On tasting, the lightly oxidised, pan-fried green tea was mellow, carrying a subtle sweet toastiness and fresh spring flavour without astringency or bitterness. The white pomelo contributed a gentle sweet fruity acidity as the juice vesicles popped, while the fresh lemon heightened the brightness of the tea without overt sourness. Half sugar provided an ideal level of sweetness; any more would have been overwhelming. Along with the texture from the pomelo, the agar pearls added a fresh bounce that complemented the spring-like freshness of the tea. However, we would have preferred if they strained the seeds from the lemon, as they detracted from the tea. Otherwise, it was a beverage we would repurchase.
