Imuraya Yawamochi Ice Matcha Ice

This Yawamochi Ice Green Tea Ice was the first product from the ‘Yawamochi Ice Series’ that focused on kakigōri or shaved ice. This product was also the third in a series of collaboration with Fukujuen, a long-established tea shop in Kyōto.

The frozen dessert consisted of four layers of finely shaved ice infused with Uji matcha under the supervision of Fukujuen, complemented by five pieces of shiratama mochi, tsubuan from Imuraya, and a drizzle of condensed milk sauce. The shaved ice was crafted by Misato Hyoshitsu, a company renowned for producing ice from natural water located 150 meters underground in the Nunobiki Mountains of Suzuka, Mie Prefecture. Ice by Misato Hyoshitsu had also been a staple choice for many popular shaved ice stores throughout Japan. This type of ice, derived from pure natural water, possesses exceptional clarity, hardness, and resistance to melting, rendering it an ideal choice for creating kakigōri.

The ice had been meticulously shaved to achieve a delicate, summery texture that crunched pleasantly with each bite. Its airy consistency allowed it to glide effortlessly on the spoon, providing a truly refreshing sensation. The matcha boasted a vivid presence, characterized by its gentle, grassy undertones. Any potential bitterness was gracefully balanced by the creamy, sweet notes of condensed milk, creating a harmonious blend of flavours. The red bean component, soft and slightly chunky, added a layer of sweetness and earthiness that contrasted beautifully with the ice’s crispiness. Furthermore, the five soft mochi toppings retained their delightful chewiness, even when frozen. In sum, each element of this dessert was perfected in its own right and harmoniously combined to create a cohesive, revitalizing treat perfect for savoring during the summer months.

This Imuraya Yawamochi Matcha Kakigōri contained 130 mL. It was produced in Japan and purchased in Sydney, Australia in 2023.
