Thicc Cookies is a company churning out New York-style cookies to Sydney, and behind them are the same people who run Banksia Bakehouse, which launched in the CBD in August 2022.

This is the Pandan Coconut ($7.00) described as a ‘pandan THICC Cookie filled with a kaya jam centre and topped with white chocolate and roasted, shredded coconut.

Heated for about 30 seconds in the microwave, the cookie had a dense and slightly crunchy exterior that softened immediately to a warm centre. The pandan flavour — slightly grassy and coconut-ty — was bold and amplified by the pandan in the kaya jam that also delivered a rich and oozy mouthfeel. The white chocolate and coconut sitting atop the cookie brought a layer of texture yet also a very bold sweetness. Overall, we were surprised by how much we enjoyed the flavours and textures, yet we’re in no hurry to eat any more of these cookies due to their richness and overwhelming sweetness.
