This is the Red Rock Deli Potato Chips Chef Series Portuguese Chicken with Lemon & Oregano, also in collaboration with Colin Fassnidge.

The chips were dusted in an orange and green seasoning and have a rich chicken aroma. Upon tasting, notes of lemon came through initially ahead before bold notes of oregano develop in the body to recall a marinara pizza, but are swiftly restrained by the rounded savoury flavour of the  garlicky chicken that comes to the fore in the finish and lingered long in the aftertaste. Much like Oporto’s flame grilled Portuguese chicken with lemon and herb sauce, the lemon here is not zesty or overly acidic, but lends just that hint of freshness to the flavour. We enjoy these chips more than the braised beef brisket with caramelised onion.
