This is the Classic Wootea with Almond Jelly ($7.20, fixed sweetness, fixed ice) from WooTea. It featured an unsweetened oolong tea base with ‘almond jelly’—more widely known as almond tofu—a soft, jellied dessert made of apricot kernel milk, agar, and sugar, popular throughout East Asia. It is unrelated to what is known as almonds in the West.

The beverage was served in an opaque paper cup but featured a transparent brown-red oolong base with slices of white almond jelly at the bottom. When consumed chilled, the oolong tea had a strong astringency and moderate bitterness, lacking sweetness and the typical toasted sweet notes of oolong tea of that colour. The drink relied exclusively on the almond jelly for sweetness and flavour, which thankfully, redeemed the drink. It delivered a fragrant flavour with a thick and creamy texture—thicker than regular jelly—with a fine grit from the ground almond kernel. Overall, the tea base was unremarkable, but the well-executed almond jelly provided a unique bubble tea topping in Sydney, making it worth repurchasing for that reason.
